Ingredients

Sugar, granulated
Few drops of vanilla extract

Ricotta cheese

Oil for frying
Powdered sugar

Directions

  1. Servings: 8 Info: "Watch these Cheese Fritters puff up into little golden balls. " DIRECTIONS: In a large bowl, beat eggs until fluffy.
  2. Add granulated sugar, vanilla and baking powder; mix well.
  3. Mix in ricotta cheese.
  4. Fold in flour a little at a time.
  5. Cover bowl and let batter stand at room temperature 1 hour.
  6. Pour oil 2 inches deep in a large saucepan or deep fryer.
  7. Heat oil to 375-F (190-C) or until a 1" cube of bread turns golden brown almost immediately.
  8. Drop batter a few tablespoonfuls at a time into hot oil.
  9. Turn fritters.
  10. When golden on both sides, remove from oil with a slotted spoon.
  11. Drain on paper towels.
  12. Arrange drained fritters on a platter.
  13. Sprinkle with powdered sugar.
  14. Serve hot.
