Mushroom Crust Quiche Recipe

Ingredients

Fresh mushrooms,
Coarsely chopped

Chopped green onions

Eggs, slightly beaten

Cayenne pepper

Fine dry bread crumbs

Cottage cheese
1
c
Shredded Monterey Jack
Cheese

Directions

  1. Melt butter in skillet, add mushrooms and saute until golden, about 10 minutes.
  2. Stir in bread crumbs, then pat into a 9" pie pan or divide among eight 4" tart pans.
  3. Combine cheeses and remaining ingredients;spoon into prepared crust.
  4. Bake @ 350 degrees 35 to 45 minutes, until puffy and golden.
  5. Cool about 10 minutes before serving.
  6. Makes one 9" pie.
