Orange rind

Egg whites

Orange juice

Lemon juice

Heavy cream
Directions
- Simmer water and sugar for 10 minutes.
- Grate and add orange rind.
- Cook 5 minutes more.
- Cool, then chill.
- In large bowl beat egg whites until foamy.
- Combine and stir in orange juice and lemon juice.
- Add cooled syrup and heavy cream.
- Stir freeze.
- Makes about 1 quart.
- Note: This recipe is for a 1-quart machine.
- Double or triple ingredients if needed for your machine.
